Easy High-Protein Waffles

A simple blender waffle recipe made with cottage cheese or Greek yogurt, eggs, oats, and baking powder for busy breakfasts.

Ingredients
  

  • 1 cup cottage cheese or plain Greek yogurt
  • 2 large eggs
  • 1 cup oat flour or blended rolled oats
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1 tbsp maple syrup or honey optional
  • 1-4 tbsp milk as needed if batter is thick

Method
 

  1. Preheat the waffle iron and lightly grease it if needed.
  2. Blend or whisk cottage cheese or Greek yogurt with eggs until mostly smooth.
  3. Stir in oat flour, baking powder, vanilla, salt, and maple syrup if using.
  4. Let the batter rest for 5 minutes so the oats hydrate; thin with milk 1 tablespoon at a time if needed.
  5. Cook in the waffle iron for 3 to 5 minutes per batch, until the waffles release cleanly and the edges are crisp.
  6. Cool extras on a rack before refrigerating or freezing.

Notes

Refrigerate up to 4 days or freeze in a single layer before bagging. Reheat in a toaster, toaster oven, or air fryer.
