Method
- Cut the chicken into roughly 1-inch nugget-sized pieces.
- Beat the eggs in one bowl. In a second bowl, combine the panko, parmesan, garlic powder, paprika, salt, and pepper.
- Dip each piece of chicken in the egg, then press into the panko mixture to coat on all sides.
- Arrange the nuggets in a single layer in the air fryer basket, leaving space between pieces so they crisp instead of steam. Lightly spray the tops with oil.
- Air fry at 400°F for 10-12 minutes, flipping halfway through, until golden and the internal temperature reaches 165°F.
- Let rest 2 minutes before serving.
Notes
No air fryer? Bake at 425°F for 15-18 minutes on a wire rack set over a baking sheet, flipping halfway, until golden and cooked through. To freeze, bread the nuggets raw in a single layer, then air fry from frozen with 4-5 extra minutes.
