High-Protein Air Fryer Chicken Nuggets

Crispy air fryer chicken nuggets made with real chicken breast, a light panko coating, and about 39 grams of protein per serving.

Ingredients
  

  • 1.5 lbs boneless, skinless chicken breast 680g, cut into nugget-sized pieces
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/4 cup grated parmesan cheese optional, but adds good flavor
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • cooking spray or olive oil spray

Method
 

  1. Cut the chicken into roughly 1-inch nugget-sized pieces.
  2. Beat the eggs in one bowl. In a second bowl, combine the panko, parmesan, garlic powder, paprika, salt, and pepper.
  3. Dip each piece of chicken in the egg, then press into the panko mixture to coat on all sides.
  4. Arrange the nuggets in a single layer in the air fryer basket, leaving space between pieces so they crisp instead of steam. Lightly spray the tops with oil.
  5. Air fry at 400°F for 10-12 minutes, flipping halfway through, until golden and the internal temperature reaches 165°F.
  6. Let rest 2 minutes before serving.

Notes

No air fryer? Bake at 425°F for 15-18 minutes on a wire rack set over a baking sheet, flipping halfway, until golden and cooked through. To freeze, bread the nuggets raw in a single layer, then air fry from frozen with 4-5 extra minutes.
