High-Protein Cottage Cheese Oat Sandwich Rolls

Soft, practical cottage cheese oat rolls for busy lunches, sandwich prep, and simple weekday leftovers.
Prep Time 10 minutes
Cook Time 22 minutes
Total Time 32 minutes
Servings: 6 rolls
Course: Lunch

Ingredients

  • 1 cup cottage cheese blended smooth if chunky
  • 1 cup oat flour
  • 2 large eggs
  • 1 tsp baking powder
  • 1/4 tsp fine salt
  • 1 tbsp olive oil plus more for hands or pan
  • 1 tbsp ground flaxseed optional, for a sturdier roll

Method

  1. Heat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Blend the cottage cheese and eggs until mostly smooth.
  3. Stir in oat flour, baking powder, salt, olive oil, and flaxseed if using. Let the dough rest for 5 minutes so the oat flour can hydrate.
  4. With lightly oiled hands, divide the dough into 6 small mounds and shape into sandwich-roll rounds on the baking sheet.
  5. Bake for 20 to 24 minutes, until the tops look set and the bottoms are lightly golden.
  6. Cool at least 10 minutes before slicing so the centers finish setting.

Notes

Use thick cottage cheese or strain watery cottage cheese briefly. The rolls are tender, not crusty bakery bread; toast leftovers for the best texture.
