Ingredients

  • 6 ounces 93% lean ground turkey or chicken
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • salt and pepper to taste
  • 1/2 cup black beans or pinto beans drained and rinsed
  • romaine lettuce or mixed greens chopped, as desired
  • rice or quinoa cooked, optional
  • fresh vegetables and toppings tomatoes, corn, bell peppers, red onion, jalapeños, cilantro, salsa, avocado, or guacamole as desired
  • 2 tablespoons Greek yogurt
  • 1/4 cup shredded cheese optional
  • lime a squeeze to finish

Method

  1. Heat a skillet over medium-high heat. Add the ground turkey or chicken, breaking it up as it cooks. Season with cumin, chili powder, garlic powder, paprika, salt, and pepper. Cook for 7–8 minutes until no pink remains.
  2. While the protein cooks, wash and chop the lettuce. If using rice or quinoa, cook it according to package directions or use a pre-cooked option.
  3. Dice the vegetables, drain and rinse the beans, and gather the toppings.
  4. Start with the lettuce, rice, or both. Add the warm protein, then layer on the beans, vegetables, and toppings. Finish with Greek yogurt, salsa, and a squeeze of lime.
