Ingredients

  • 1 slice whole-grain toast or 2 rice cakes
  • 1/3 cup cottage cheese
  • 1/4 cup thin cucumber slices
  • 1/4 tsp everything bagel seasoning or black pepper
2. Greek yogurt ranch dip plate
  • 1/2 cup plain Greek yogurt
  • 1 tsp ranch seasoning
  • 1 tsp lemon juice
  • 1 cup raw vegetables carrots, cucumber, peppers, or celery
  • 6 each whole-grain crackers optional
3. Egg salad lettuce cups
  • 2 each hard-boiled eggs peeled and chilled
  • 1 tbsp plain Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tbsp chopped pickle or celery
  • 2 each large lettuce leaves
4. Tuna cucumber bites
  • 1 can tuna in water about 85 g drained
  • 1 tbsp plain Greek yogurt
  • 1 tsp lemon juice or pickle juice
  • 12 slices cucumber rounds
  • 1 pinch black pepper
5. Warm edamame snack bowl
  • 1 cup frozen edamame pods
  • 1 tsp soy sauce or tamari
  • 1/4 tsp garlic powder
  • 1 pinch chili flakes optional
  • 1 wedge lemon
6. Turkey pickle roll-ups
  • 3 slices deli turkey
  • 1 large pickle spear cut lengthwise into 3 pieces
  • 1 tbsp mustard
  • 2 tbsp cottage cheese optional spread
7. Cottage cheese fruit bowl
  • 1/2 cup cottage cheese
  • 1/2 cup berries or chopped fruit
  • 1 tbsp granola or chopped nuts
  • 1/8 tsp cinnamon
8. Greek yogurt tuna crackers
  • 1 pouch tuna about 70 g drained
  • 2 tbsp plain Greek yogurt
  • 1 tsp mustard or hot sauce
  • 8 each crackers
  • 1 tbsp chopped celery or pickle optional
9. Egg and turkey snack box
  • 1 each hard-boiled egg
  • 2 slices deli turkey
  • 1/2 cup cucumber or carrot sticks
  • 6 each crackers
  • 1/2 cup grapes or berries

Method
 

General food-safety setup
  1. Start with clean hands and a clean board. Keep hard-boiled eggs, tuna, cottage cheese, Greek yogurt, and deli turkey refrigerated until you use them.
  2. For chilled snacks, serve right away or return leftovers to the fridge within 2 hours. For deli turkey and cooked eggs, discard anything left at room temperature longer than 2 hours.
1. Cottage cheese cucumber toast — prep 5 minutes, no cooking
  1. Toast the bread if using toast. Spread with cottage cheese, top with cucumber, then finish with seasoning.
2. Greek yogurt ranch dip plate — prep 5 minutes, no cooking
  1. Stir Greek yogurt, ranch seasoning, and lemon juice until smooth. Serve with vegetables and crackers.
3. Egg salad lettuce cups — prep 8 minutes, no cooking if eggs are already boiled
  1. Chop or mash the eggs with Greek yogurt, mustard, and pickle or celery. Spoon into lettuce leaves and eat right away.
4. Tuna cucumber bites — prep 7 minutes, no cooking
  1. Drain tuna well. Stir with Greek yogurt, lemon or pickle juice, and pepper. Spoon onto cucumber rounds.
5. Warm edamame snack bowl — prep 2 minutes, warming 4–5 minutes
  1. Microwave or steam frozen edamame according to the package directions until the pods are steaming hot. Let steam escape before eating.
  2. Toss with soy sauce, garlic powder, chili flakes, and lemon.
6. Turkey pickle roll-ups — prep 5 minutes, no cooking
  1. Spread turkey slices with mustard and optional cottage cheese. Add pickle pieces, roll tightly, and slice if desired.
7. Cottage cheese fruit bowl — prep 3 minutes, no cooking
  1. Spoon cottage cheese into a bowl. Top with fruit, granola or nuts, and cinnamon.
8. Greek yogurt tuna crackers — prep 6 minutes, no cooking
  1. Stir tuna with Greek yogurt and mustard or hot sauce. Fold in celery or pickle if using. Scoop onto crackers just before eating so they stay crisp.
9. Egg and turkey snack box — prep 5 minutes, no cooking
  1. Pack the egg, turkey, vegetables, crackers, and fruit in a divided container. Keep chilled until snack time.

Notes

Practical substitutions: Use lactose-free Greek yogurt or cottage cheese if needed. Swap rice cakes for toast, cucumber rounds for crackers, canned salmon or chicken for tuna, shelled edamame for pods, hummus for mustard, or tofu slices for turkey. For gluten-free snacks, choose gluten-free crackers or rice cakes. Season to taste with lemon, pepper, herbs, chili flakes, or everything bagel seasoning.
